Wilder Supper Club: Autumn

Twenty-five people. Two long tables. A walk across the land as the light goes, then dinner.
We start at 3pm at the Hub. At 3.30, Chloe leads a walk across the rewilding project as the sun sets, showing you what’s growing wild and what we’ve been doing with the land. You’ll be back for 5pm, when there’s a Wilder Gin spritz with rose hip, lemon balm and rosemary waiting for you (or an alcohol-free version).
At 5.30 we sit down to eat. Award-winning chef Jane Alty is cooking a sharing menu built around what’s coming out of our market garden this autumn, plus the hedgerows and fantastic local producers.

Wildfarmed focaccia, smoked mackerel, hummus and basil oil
Layered potato chip, smoked bacon cream, cured egg yolk

Grilled bavette steak, saffron and burnt leek orzo, salsa verde
Roast butternut and Hungarian blue squash, harissa, chickpeas, tahini dressing
Roast carrots and parsnips, stracciatella with chilli tomato jam
Savoy cabbage, dandelion, chicory and tarragon with Caerphilly, sweet chestnuts and anchovy dressing
Pudding
Ginger loaf, roasted plums, zabaglione, toasted almonds
Good to know
Price: £65 per person, which covers the walk, the welcome drink and the meal. Wine and beer are available from our bar.

Who it’s for: best suited to adults.
What to wear: the walk crosses rough, uneven ground and finishes in the dark. Wear boots and warm layers, and bring a torch if you have one.
Finding us: The Grange Project, Llanvihangel Ystern Llewern, Monmouth NP25 5HW. The postcode takes you to a neighbouring dairy farm, so keep going for another half mile. Easiest is to search “Grange Project” in Google or Apple Maps. Go past the gate signed Grange Farm to the double gates signed Welcome to the Grange Project, follow the track down and turn right into the top barn to park. The Hub is a short walk down from there.
